As we enter peak week I thought it would be fun to share my typical day of eating on prep! When I was first starting in prep, I found blogs and videos like this to be super helpful to discover meals and recipes that were ideal for what I’m doing. So let’s eat!
Quaker Oatmeal, cooked. Egg whites added, stir, then microwave for 30 seconds, stir, add sliced apples and microwave another 30 seconds. Add vanilla or cinnamon protein powder (I use Phormula-1 CTC, but I’m thinking that pumpkin spice with pumpkin purée might be on the menu after my show! Helllooo Fall)! Add cinnamon. Topped with 1T low fat crunchy PB!
Egg white omelette with spinach and yellow/ red peppers. Topped with pico de gallo or salsa.
1 slice of Peperidge Farms pumpkin spice bread, toasted (if you can find it, buy it and freeze it! It’s BOMB) Top with almond butter!
Basic Taco Bowl : Extra lean ground beef with taco seasoning, shredded romaine lettuce, grape tomatoes. Top with hot sauce.
When I’m not in peak week I add toasted tortillas as “chips”, cheese, salsa and low fat Greek yogurt as sour cream (or light sour cream)!
Tilapia, seasoned with garlic and herb. Air fried asparagus with sea salt.
I loveeeee fish and veggies! I was made for this sport!
The best part of the day is what I’ve dubbed the Reese’s Rice Cake!
It’s evolved a bit over the past few months and has become a mix of a bunch of stuff for the topping, but this is my favorite version yet (except when I can top with bananas!)
2 rice cakes, one is Leiber’s (4 carbs!) and the other one is a Quaker caramel rice cake since today I am starting to add carbs! Top the rice cakes with Nuts and More Cookie Dough, but I’ll be trying it with American Dream Nut Butters as well (I have a full cart haha).
Ok for the topping: 15g 1st Phorm Phormula-1 Chocolate Milkshake, 5 G Protein Cookie Butter Brownie Batter, 10 G PB Fit Cocoa. Add water (slowly!) until it forms “frosting”. I usually add liquid Stevia or Stevia in the Raw if it’s not peak week!
Top the rice cakes, put in the freezer for 20-30 min until the “frosting” hardens into a fudgey topping of deliciousness. Top with light cool whip!
